It is a fish that reaches 9 kg in weight and 2.10 meters in length, has a compressed body and silvery ribbon-like shapes. It is found in the eastern Atlantic Ocean, from Iceland to South Africa, in the Indo-Pacific Ocean and in the Mediterranean Sea, Tyrrhenian Sea and Adriatic Sea.
It lives in the abysses between 100 and 400 meters deep.

Purchase and conservation

Fishing seasonality: all year round, but especially in the summer and autumn months.
Lean and particularly digestible fish, it has firm, white meat with pink hues and has few easily removable spines. It has a delicate and very neutral flavor.
To check if the product is fresh, the color of the eye and skin must be alive, the meat compact without breaking easily. Due to the extremely robust teeth, it is necessary to handle the saber fish with care, as it has a sharp mouth even when dead.

Use in the kitchen

It is cooked fried, baked, marinated or stewed with onions, while it tends to become a little fibrous on the grill.

Marinate the fish fillets with extra virgin olive oil, lemon, white wine, parsley, salt, pepper and leave them for at least two hours.
