The production area includes the territories of the following municipalities in the province of Verona: Bovolone, Buttapietra, Casaleone, Cerea, Concamarise, Erbè, Gazzo Veronese, Isola della Scala, Isola Rizza, Mozzecane, Nogara, Nogarole Rocca, Oppeano, Palù, Povegliano Veronese , Ronco allAdige, Roverchiara, Salizzole, Sanguinetto, San Pietro di Morubio, Sorgà, Trevenzuolo, Vigasio, Zevio.

Features

The Vialone Veronese PGI Nano Rice is obtained from rigorously selected seeds of the Oriza Japonica species, Vialone Nano variety.
The grain must be of medium thickness, round, semi-long, with a pronounced tooth, a squat head and a rounded section. It must be white in color, without a strip and have an extended central pearl.
In addition to the varietal characteristics indicated above, the Vialone nano Veronese must respect the following physical-chemical parameters:
- amylose not lower than 21% s.s.
- gelatinization time between 15 and 20 minutes
- consistency index not less than 0.85 kg / cm2
- stickiness index not higher than 2,5 g / cm.

Production regulations - Vialone Nano Veronese PGI rice

Article 1
Name
The protected designation of origin Vialone Nano Veronese is reserved for vialone nano rice that meets the conditions and requirements established by this production specification.

Article 2
Variety of rice
The protected designation of origin Vialone Nano Veronese must be obtained only from rice cultivations of the japonica species of the vialone nano variety.

Article 3
Production area
The paddy rice destined for the production of rice of the protected designation of origin Vialone Nano Veronese must be produced on land that can be irrigated in the Veronese plain.
This area includes the administrative territories of the following municipalities: Bovolone, Buttapietra, Casaleone, Cerea, Concamarise, Erbè, Gazzo Veronese, Isola della Scala, Isola Rizza, Mozzecane, Nogara, Nogarole Rocca, Oppeano, Palù, Povegliano Veronese, Ronco allAdige, Roverchiara , Salizzole, Sanguinetto, San Pietro di Morubio, Sorgà, Trevenzuolo, Vigasio, Zevio.
The production area of ​​the protected denomination of origin Vialone Nano Veronese is thus delimited in cartography 1: 25.000: starting from the north-west or south of the village of Villafranca, proceed along the course of the Alto Agro Veronese canal up to the locality Pontoncello (Santa Maria di Zevio, then follow the course of the Adige river to the municipality of Roverchiara; from here continue south along the municipal road that leads to Cerea and then along the Menago river until you meet the White Canal that joins the boundary in question with the Mantuan border near Bastiorie San Michele; following this border you arrive at the provincial road n.62 (near the hamlet of Tormine) whose path to the village of Villafranca, the starting point, is the last stretch of demarcation.

Article 4
Cultivation and drying characteristics
The cultivation of Vialone Nano Veronese rice must be done on land cultivated in rotation or rotation. The paddy field cannot insist on the same plot for more than six consecutive years and return to it after at least two years.
The fight against weeds, before the authorized herbicides, must take place with good cultivation techniques, with the regulation of the water in the rice field and with targeted tillage of the soil.
The fertilizations must be directed to the obtaining of healthy and mature grain and the maximum production per hectare must not exceed 70 quintals.
The vialone nano seed used must not be infected with cryptogamic parasites including: piricularia oryzae, fusarium monoliform, drechslera oryzae. The seed must be certified by the E.N.S.E.
The moisture content of the dried paddy rice to be sent for processing must not exceed 14.0%.
The drying must be carried out in dryers capable of uniformly lowering the grain humidity, without leaving combustion residues or foreign odors on the glumella. Only indirect fire dryers are allowed except for those powered by methane, g.p.l. or agricultural diesel.
The Consortium for the protection of Vialone Nano Veronese rice is committed to collaborating with the responsible creator of the Vialone Nano variety, Experimental Institute for Cereals, specialized station for rice growing in Vercelli, responsible for the conservation of the Vialone Nano variety in purity.

Article 5
Method of processing rice
The bleaching and rice packaging operations must be carried out within the area delimited by art.3.
The recommended and permitted processes are those listed below:
defrosting: processing to remove the glumelle (husk) which can be carried out with both roller and emery defrosts;
bleaching: processing to remove the pericarp and embryo which must be performed with suitable bleaching machines;
secondary processing: in addition to the bleaching operation, the rice can undergo a processing with the emery propeller, to eliminate the pinstriped grains, and a processing with the spangle brush or the water-air polisher for polishing the caryopsis.

Article 6
Consumer characteristics
To be accepted for consumption, Vialone Nano Veronese rice must have the following grain characteristics:
- color of the pericarpobianco

- pronounced tooth

- rounded section with the following average values:
- length 5.7 mm
- width 3.5 mm
- thickness 2.1 mm
- shape (length / width) 1.6
The limits of defects allowed for marketing are those listed in the Ministerial tables issued by Decree every year and published in the Official Journal.
For varietal impurities the maximum allowed limit is 3%.
In addition to the aforementioned varietal characteristics, the Vialone Nano Veronese must respect the physico-chemical parameters listed below:
- amylose% s.s. above 21
- gelatinization time 15.5-16.5 minutes
- consistency index higher than 0.85 kg / cmq
- glue index lower than 1.1 g / cm

No insecticide or fumigant treatment is allowed for the conservation of processed rice.
It is the faculty of the Ministry of Agriculture, Food and Forestry to insert or modify, at the request of the Consortium for the protection of Vialone Nano Veronese rice, the chemical-physical parameters capable of further characterizing the identity of the denomination.

Article 7
Designation and presentation
The denomination referred to in art. 1 is prohibited, on the packaging, the addition of any qualification not expressly provided for in this production specification including the adjectives: chosen, selected, superior, genuine, cimone.
The use of additional geographical mentions, geographical or toponymic indications referring to municipalities, hamlets and geographic areas included in the production area referred to in article 3 is prohibited.
However, the use of names, company names, private brands is allowed, provided they have no laudative meaning and are not such as to mislead the buyer on geographical names.
The use of names, farms, estates, farms, courtyards and the reference to packaging in the rice farm or in the association of rice farms or in the company, located in the production area, is allowed only if the product has been obtained exclusively with rice harvested in the rice fields belonging to the company.
The name of the protected denomination of origin Vialone Nano Veronese must appear on the packaging in clear, indelible characters, with a colorimetry of wide contrast with respect to the color of the. packaging and such that it can be clearly distinguished from the complex of indications that appear on the packaging.
The packages of Vialone Nano Veronese rice for the purposes of release for consumption must be 0.5 kg, 1 kg, 2 kg and 5 kg, of material allowed by current legislation.
The rice packs must be numbered according to the indications provided by the Consortium for the protection of Vialone Nano Veronese rice.

Article 8.
Controls
All rice growers are obliged, at the end of sowing, to proceed with a production report on special forms provided by the Protection Consortium, indicating the area invested in rice for all the varieties sown and the related cadastral data. This report must reach the Protection Consortium by May 31 of each year accompanied by a copy of the surface report submitted to the National Rice Authority.
In the same way, by November 30 of each year and in any case before the start of marketing, producers must report, always on the forms provided by the Protection Consortium itself, the product quantities of the various batches of Vialone nano paddy rice and request sampling.
The Protection Consortium will have to quickly sample the heaps of paddy rice, carry out the necessary checks and issue the authorization to use the denomination.
All processed data relating to Vialone Nano Veronese paddy rice production will be sent to C.C.I.A.A. for information. of Verona by the Protection Consortium.
The rice mills must comply with all the directives of the Vialone Nano Veronese Rice Protection Consortium, submit to the controls and make the registers of the National Rice Authority available to the same.
The supervision for the application of the provisions of this production specification is carried out by the Ministry of Resources / Agriculture, Food and Forestry, which can avail itself of the consortium among producers for the control of production and trade of Vialone Nano Veronese Rice. established by art. 10 of the Reg. (CEE) 2081/92.
